Spicy Tofu and Pepper Jack Cheese Sandwich Recipe

Ingredients:
- 1 block of firm tofu
- 2 slices of gluten-free bread
- 3 jar of vegan cheese (like cashew or nut based)
- 4 pack of vegan jalapeño peppers
- 5 cloves of garlic
- 7 tablespoon of olive oil
- Salt and black pepper to taste
- 9 any desired vegan mayonnaise or mustard for spreading on the bread
Instructions
- Preheat a toaster oven oven toast the slices of gluten-free bread to your liking.
- While the bread is toasting, drain and crumble the block of firm tofu into a large mixing bowl.
- Add in the drained and chopped jalapenos to the bowl along with minced garlic cloves.
- In another small bowl, mix together salt and black pepper to taste. Sprinkle the seasoned mixture over the tofu and pepper combination in the mixing bowl.
- Heat up the olive oil in a non stick skillet over medium heat.
- Once hot, add the tofu and pepper jack cheese mixture to the skillet. Cook for about 5 minutes, stirring occasionally until the cheese has melted and everything is well combined.
- When the bread is done toasting, remove it from the oven and let it cool down a bit.
- Spread the desired amount of vegan mayonnaise or mustard onto one side of each slice of bread, preparing them to be the base and top of the sandwich.
- Place the cooked spicy tofu and pepper jack cheese mixture onto one half of the bottom slice of bread, leaving space near the edges for the other slice of bread to fit snugly on top of it later.
- Place the other slice of bread on top of the filling, creating a complete sandwich.
- Press the two slices of bread together, with the filling in between them, to hold everything securely in place.
- Cut the sandwich in half diagonally if desired, making it easier to bite into and serve immediately.
