Ayote en Miel (Squash with Spiced Syrup) Ingredients: - 1 medium butternut squash or pumpkin - 2 cups water - 1 cup sugar - 1/4 teaspoon ground cloves - 1/2 teaspoon cinnamon - 1/8 teaspoon allspice
- Peel and seed the squash or pumpkin, then cut it into cubes about 3 cm in size.
- In a large pot, combine the squash pieces and enough water to cover them completely. Bring to a boil over high heat; reduce heat and simmer until squash is tender, approximately 20 minutes. Drain well.
- While the squash cooks, prepare the syrup by combining the sugar, cloves, cinnamon, and allspice in a small saucepan. Stirring constantly, bring this mixture to a gentle boil over medium heat. Reduce heat and let it simmer for five minutes. Remove from heat and set aside.
- Place the cooked squash in an ovenproof dish. Pour the spiced syrup evenly over the top of the squash cubes, ensuring that they are thoroughly coated. Bake at 350°F (175°C) for about 20 minutes, or until bubbly and slightly browned around the edges.
- Serve warm as a side dish or dessert. It can also be served chilled on its own or with ice cream if desired!
