Ayote en Miel (Squash with Spiced Syrup) Ingredients: - 1 medium butternut squash or pumpkin - 2 cups water - 1 cup sugar - 1/4 teaspoon ground cloves - 1/2 teaspoon cinnamon - 1/8 teaspoon allspice

Instructions

  1. Peel and seed the squash or pumpkin, then cut it into cubes about 3 cm in size.
  2. In a large pot, combine the squash pieces and enough water to cover them completely. Bring to a boil over high heat; reduce heat and simmer until squash is tender, approximately 20 minutes. Drain well.
  3. While the squash cooks, prepare the syrup by combining the sugar, cloves, cinnamon, and allspice in a small saucepan. Stirring constantly, bring this mixture to a gentle boil over medium heat. Reduce heat and let it simmer for five minutes. Remove from heat and set aside.
  4. Place the cooked squash in an ovenproof dish. Pour the spiced syrup evenly over the top of the squash cubes, ensuring that they are thoroughly coated. Bake at 350°F (175°C) for about 20 minutes, or until bubbly and slightly browned around the edges.
  5. Serve warm as a side dish or dessert. It can also be served chilled on its own or with ice cream if desired!
