Caramelized Plantains with Beans and Rice Ingredients: - 2 ripe plantains - 1 can black beans, drained and rinsed - 1 cup cooked white rice - 3 tablespoons unsalted butter - 4 tablespoons brown sugar - Salt to taste - Freshly ground black pepper

Instructions

  1. In a large skillet or frying pan over medium heat, melt the butter. Add the sliced plantains and cook for about 5 minutes on each side until they are golden brown and caramelized. Set aside.
  2. In another small saucepan, combine the drained black beans, brown sugar, salt, and black pepper. Cook over low heat for about 10 minutes, stirring occasionally so that the beans become coated in the sweet glaze.
  3. To serve, place a bed of cooked white rice onto your plate. Top it off with some caramelized plantains followed by the sticky glazed black beans. You may garnish this dish with chopped fresh cilantro if desired. Enjoy!
