Chef’s Special Parmesan Mashed Potatoes.

Ingredients: - 5 large Russet potatoes - Salt and pepper to taste - 4 tablespoons unsalted butter - 1/2 cup heavy cream or milk - 3/4 cup grated parmesan cheese - Chopped fresh chives for garnishing (optional)


  1. Peel and cut the potatoes into evenly sized pieces. Place them in a pot of cold water with salt added to it. Bring the water to boil over high heat, then reduce the heat to medium-low and let simmer until the potatoes are tender enough when pierced by fork, around 20 minutes. Drain well.

  2. In a separate saucepan, melt the butter over low heat. Add in the cooked drained potatoes along with the heavy cream (or milk). Use an electric mixer or masher to mash the mixture until smooth and fluffy. Make sure not to overwork as this may lead to gluey textures. Season with salt and black pepper according to your preference.

  3. Stir in the grated parmesan cheese until fully combined throughout the mashed potatoes. Taste test again for seasoning adjustments if necessary. If desired, top off each serving with some chopped fresh chives just before serving for added color and flavor.
