Crunchy Cauliflower Salad Ingredients: - 1 head of cauliflower, cut into florets - 2 cups shredded carrots - 1 cup thinly sliced green cabbage - ½ cup chopped fresh cilantro - ¼ cup sesame seeds, toasted - 3 tablespoons olive oil - 3 tablespoons rice vinegar - 2 teaspoons sugar - Salt and pepper, to taste
- In a large bowl, combine the cauliflower, carrots, cabbage, cilantro, and sesame seeds. Set aside.
- In a small bowl, whisk together the olive oil, rice vinegar, sugar, salt, and pepper until well combined. Pour this dressing over the salad mixture and toss gently to coat evenly.
- Cover the salad and refrigerate for at least 30 minutes or up to overnight before serving. This will allow the flavors to meld together and make the salad extra crunchy!
