2.7 g Ingredients: - 1 tablespoon extra virgin olive oil or sesame oil - 1 pound fresh shiitake mushrooms, stems removed and caps sliced - 1 small head bok choy, cut into bite sized pieces including leaves - Salt and ground black pepper to taste - ½ cup chicken broth or vegetable broth - 1 teaspoon soy sauce - 1 tablespoon honey or maple syrup - 1 teaspoon cornstarch dissolved in 1 tablespoon water
Instructions
- In a large skillet or wok, heat the oil over medium high heat. Add the shiitake mushroom caps and stir fry for about 3-5 minutes until they begin to soften and brown slightly.
- Add the bok choy to the pan and continue cooking for another 5 minutes until the bok choy is tender but still bright green. Season with salt and black pepper according to your tastes.
- In a separate bowl, mix together the chicken (or veggie) broth, soy sauce, and honey (or maple syrup). Pour this mixture into the pan with the vegetables. Bring it all up to a gentle boil then lower the heat and let it simmer for around 5 more minutes allowing the sauce to thicken slightly.
- Stir in the cornstarch slurry and cook for an additional minute until the glaze has thickened on the vegetables. Remove from heat and serve immediately as a side dish or main course accompanied by rice or quinoa. Enjoy!
