2.7 g Ingredients: - 1 tablespoon extra virgin olive oil or sesame oil - 1 pound fresh shiitake mushrooms, stems removed and caps sliced - 1 small head bok choy, cut into bite sized pieces including leaves - Salt and ground black pepper to taste - ½ cup chicken broth or vegetable broth - 1 teaspoon soy sauce - 1 tablespoon honey or maple syrup - 1 teaspoon cornstarch dissolved in 1 tablespoon water

Instructions

  1. In a large skillet or wok, heat the oil over medium high heat. Add the shiitake mushroom caps and stir fry for about 3-5 minutes until they begin to soften and brown slightly.
  2. Add the bok choy to the pan and continue cooking for another 5 minutes until the bok choy is tender but still bright green. Season with salt and black pepper according to your tastes.
  3. In a separate bowl, mix together the chicken (or veggie) broth, soy sauce, and honey (or maple syrup). Pour this mixture into the pan with the vegetables. Bring it all up to a gentle boil then lower the heat and let it simmer for around 5 more minutes allowing the sauce to thicken slightly.
  4. Stir in the cornstarch slurry and cook for an additional minute until the glaze has thickened on the vegetables. Remove from heat and serve immediately as a side dish or main course accompanied by rice or quinoa. Enjoy!
