Homemade Mashed Potatoes with Creamy Pan Gravy

Prep Time

6-8 servings

Ingredients for Mashed Potatoes

2 pounds russet potatoes, peeled and cut into equal size chunks 1/2 cup unsalted butter 1/2 cup whole milk or heavy cream Kosher salt to taste Freshly ground black pepper to taste

Instructions for Mashed Potatoes

  1. Place the potato chunks in a large pot and cover them completely with cold water. Add a pinch of salt to the water. Bring the water to boil over high heat. Reduce the heat to medium and let it simmer until the potatoes are tender enough when pierced by fork, approximately 15-20 minutes. Drain the potatoes well through a colander. Return the drained potatoes to the hot pot for about 30 seconds to evaporate any excess moisture. Remove from heat and transfer potatoes to a mixing bowl.
  2. Using an electric mixer or a potato masher, mash the potatoes while gradually adding the softened butter. Beat in the milk or cream slowly until you get desired consistency. Season your mashed potatoes with salt and pepper according to your tastes. Keep warm until ready to serve.

Ingredients for Pan Gravy

2 tablespoons unsalted butter 2 tablespooons all purpose flour 2 cups chicken broth (or beef broth if serving with roast) Salt and freshly ground black pepper to taste

Instructions for Pan Gravy

  1. In a saucepan over medium heat, melt the butter. Whisk in the flour and cook, stirring constantly, for about 2 minutes. This will create a roux which is used as thickening agent for gravy.
  2. Slowly whisk in the chicken broth into the roux mixture. Continue cooking until the gravy reaches your preferred thickness, around 8-10 minutes. Taste test and adjust seasoning with salt and pepper as needed. If too thick, add more broth; if too thin, continue simmering until reduced slightly. Serve immediately over the mashed potatoes.

The pan gravy can also be made using leftover drippings from cooked meats instead of chicken/beef broth for added flavor. Simply substitute the same amount of drippings for the broth when making the gravy.
