Parmesan Smashed Potatoes Ingredients: - 2 pounds small red potatoes - 1/4 cup olive oil - 3 cloves garlic, minced - 1/2 teaspoon Italian seasoning - Salt and black pepper to taste - 1/2 cup grated parmesan cheese - Fresh chopped parsley for garnish
- In a large pot of salted water, bring the potatoes to a boil over high heat. Cook until tender but still firm, about 15 minutes. Drain well and let cool slightly.
- Preheat your oven's broiler. Line a baking sheet with foil or parchment paper.
- Place each potato onto the prepared baking sheet. Using a fork or potato masher, gently smash each potato flat without breaking them apart completely. Be careful not to burn yourself!
- In a small bowl, combine the olive oil, garlic, Italian seasoning, salt, and black pepper. Mix thoroughly. Brush this mixture generously over both sides of each flattened potato on the baking sheet.
- Sprinkle evenly with the grated parmesan cheese.
- Broil in the preheated oven until golden brown and crispy, about 8 minutes per side. Keep an eye on them so they don't burn!
- Remove from the oven and allow to cool briefly before serving sprinkled with fresh chopped parsley. Enjoy immediately as a delicious side dish or appetizer!
