Thanksgiving Parmesan Smashed Potatoes


Parmesan Smashed Potatoes Ingredients: - 2 pounds small red potatoes - 1/4 cup olive oil - 3 cloves garlic, minced - 1/2 teaspoon Italian seasoning - Salt and black pepper to taste - 1/2 cup grated parmesan cheese - Fresh chopped parsley for garnish


  1. In a large pot of salted water, bring the potatoes to a boil over high heat. Cook until tender but still firm, about 15 minutes. Drain well and let cool slightly.
  2. Preheat your oven's broiler. Line a baking sheet with foil or parchment paper.
  3. Place each potato onto the prepared baking sheet. Using a fork or potato masher, gently smash each potato flat without breaking them apart completely. Be careful not to burn yourself!
  4. In a small bowl, combine the olive oil, garlic, Italian seasoning, salt, and black pepper. Mix thoroughly. Brush this mixture generously over both sides of each flattened potato on the baking sheet.
  5. Sprinkle evenly with the grated parmesan cheese.
  6. Broil in the preheated oven until golden brown and crispy, about 8 minutes per side. Keep an eye on them so they don't burn!
  7. Remove from the oven and allow to cool briefly before serving sprinkled with fresh chopped parsley. Enjoy immediately as a delicious side dish or appetizer!
