Pecan Pie Truffles Ingredients: - 1 cup chopped pecans - 3/4 cup brown sugar - 1/2 cup unsalted butter, softened - 1 teaspoon vanilla extract - 1/4 teaspoon salt - 1/8 teaspoon cinnamon - 1/8 teaspoon nutmeg - 1 and 1/2 cups graham cracker crumbs - 1 package white chocolate candy melts or almond bark

Instructions

  1. In a large bowl, mix together the chopped pecans, brown sugar, softened butter, vanilla extract, salt, cinnamon, and nutmeg until well combined. Stir in the graham cracker crumbs until fully incorporated. Cover the mixture and refrigerate for at least an hour to allow it to firm up.
  2. Using your hands, roll the chilled mixture into small truffle-sized balls and place them on a parchment paper-lined baking sheet. Freeze the truffles for about 15 minutes to help them hold their shape when dipping.
  3. Melt the white chocolate candy melts or almond bark according to the package directions. Dip each frozen truffle into the melted chocolate, using a fork or spoon to coat evenly. Allow excess chocolate to drip off before placing the coated truffle back onto the parchment paper-lined baking sheet.
  4. Sprinkle some extra chopped pecans over the top of the truffles while the chocolate is still wet. Let the chocolate set completely at room temperature before serving or storing them in an airtight container. Enjoy!
