Roasted Cauliflower Steaks with Tahini Sauce

Ingredients: - 1 large head of cauliflower - 2 tablespoons olive oil - Salt and pepper to taste - 1/4 cup tahini - 3 tablespoons lemon juice - 2 cloves garlic, minced - 1/4 cup water - Fresh parsley for garnish


  1. Preheat your oven to 400°F (200°C).
  2. Cut the cauliflower in half through its stem so that you have two thick "steaks". If either steak is uneven or wobbly, trim it down until both are evenly flat. This will help them cook evenly.
  3. Place the cauliflower steaks on a baking sheet lined with parchment paper or aluminum foil. Drizzle them with olive oil and season generously with salt and pepper. Rub the seasonings into the cauliflower to ensure they stick well.
  4. Roast the cauliflower steaks in the preheated oven for about 25 minutes, flipping halfway through, until they are golden brown and tender when pierced with a fork.
  5. While the cauliflower steaks are roasting, prepare the tahini sauce by whisking together the tahini, lemon juice, garlic, and water in a small bowl. Adjust the consistency as needed by adding more water if too thick or more tahini if too thin. Season with salt and pepper to taste.
  6. Once the cauliflower steaks are done roasting, let them cool slightly before serving. Serve each steak with a generous drizzle of tahini sauce and garnish with fresh parsley. Enjoy!
