Thanksgiving Spicy Peanut and Pumpkin Soup


Spicy Peanut and Pumpkin Soup Ingredients: - 1 small onion, diced - 2 cloves garlic, minced - 1 tbsp grated ginger - 1 tbsp olive oil or coconut oil - 4 cups pumpkin puree or cubed butternut squash - 3 cups vegetable broth - ½ cup smooth peanut butter - 1 tsp cayenne pepper (or more to taste) - 1 tsp ground coriander - Salt and black pepper to taste


  1. In a large pot over medium heat, saute the onion, garlic, and ginger in the olive oil until softened and fragrant, about 5 minutes.
  2. Add the pumpkin puree (or cubed butternut squash), vegetable broth, peanut butter, cayenne pepper, and ground coriander to the pot. Stir well to combine all ingredients.
  3. Bring the mixture to a gentle boil, then reduce heat and let simmer for about 20 minutes, stirring occasionally, until thickened slightly. Season with salt and black pepper according to your preference.
  4. Serve hot, garnished with extra peanuts if desired. Enjoy!
