Spinach Salad with Lemon and Mint
Ingredients: - 8 cups fresh baby spinach - 1/4 cup thinly sliced red onion - 2 tablespoons extra virgin olive oil - Juice of one lemon - 1/4 teaspoon salt - Freshly ground black pepper to taste - 1/4 cup chopped fresh mint leaves
crumbled feta cheese or goat cheese for serving
- In a large salad bowl, combine the baby spinach and thinly sliced red onions. Set aside.
- In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, salt, and freshly ground black pepper until well combined.
- Pour the dressing over the spinach and onions in the salad bowl, and toss gently to evenly coat the greens.
- Add the chopped fresh mint leaves into the salad mixture and mix again briefly just before serving. If desired, top each portion with crumbled feta cheese or goat cheese as a garnish. Enjoy!
