Spinach Salad with Lemon and Mint

Ingredients: - 8 cups fresh baby spinach - 1/4 cup thinly sliced red onion - 2 tablespoons extra virgin olive oil - Juice of one lemon - 1/4 teaspoon salt - Freshly ground black pepper to taste - 1/4 cup chopped fresh mint leaves

Optional

crumbled feta cheese or goat cheese for serving

Instructions

  1. In a large salad bowl, combine the baby spinach and thinly sliced red onions. Set aside.
  2. In a small mixing bowl, whisk together the extra virgin olive oil, lemon juice, salt, and freshly ground black pepper until well combined.
  3. Pour the dressing over the spinach and onions in the salad bowl, and toss gently to evenly coat the greens.
  4. Add the chopped fresh mint leaves into the salad mixture and mix again briefly just before serving. If desired, top each portion with crumbled feta cheese or goat cheese as a garnish. Enjoy!
