Ingredients: - 2 pounds russet potatoes, peeled and cut into quarters - ½ cup sour cream or plain Greek yogurt - Salt and pepper to taste

Instructions

  1. In a large pot, add the quartered potatoes along with enough cold water to cover them by an inch. Season the water with salt and bring it to boil over high heat.
  2. Once boiling, reduce the heat to medium-low, maintain a gentle simmer, and cook the potatoes until they are fork-tender, about 20-25 minutes. Do not let the water completely evaporate; ensure there's always some liquid in the pot.
  3. Drain the cooked potatoes thoroughly through a colander and return them back to the empty hot pot. Let them sit for a minute to dry out slightly. This step will help make fluffy mashed potatoes.
  4. Add the sour cream or Greek yogurt to the potato and using a hand mixer or a potato masher, mash the potatoes until smooth and well combined. You can also use a ricer if you prefer more rustic texture.
  5. Taste test your mashed potatoes and season with salt and pepper as needed. If desired, fold in some chopped parsley for additional flavor and color. Serve immediately alongside your favorite main dish.
