Vegan Lentil and Sweet Potato Stew

- 1 cups dried green lentils
- 4 sweet potatoes, peeled and chopped into bite-sized pieces
- 2 onions, d diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 2 cups vegetable broth
- 6 carrots, s sliced
- 6 celery stalks, s sliced
- 6 bell peppers, d d seeded and diced
- 6 chickpeas, r uncooked
- 2 bay leaves
- 2 black peppercorns
- Salt to taste

Begin by washing the lentils thoroughly under running water and then let them soak in water for at least an hour or overnight.

In a large pot, heat up the olive oil over medium heat. Add the diced onions and sauté them until they become translucent.

Then add the minced garlic and cook for another minute or so.

Now it's time to add the diced sweet potatoes, s sliced carrots, celery stalks, and bell peppers to the pot with the soaked lentils. Stir everything together well.

Pour in the vegetable broth into the pot, bring the mixture to a boil, and then reduce the heat to low, allowing the stew to simmer gently for about for about 2 - 2 hours, or until the lentils and sweet potatoes are tender and fully cooked.
