Easy Vegan Tomato Basil Pasta

Ingredients:
- 8 oz pasta (any shape you prefer)
- 2 cups cherry tomatoes, halved
- 1 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Fill a large pot with water and bring it to a boil. Add salt to taste and then add your chosen pasta shape to cook according to package directions until al dente. Drain and set aside.
- In a large skillet or frying pan over medium heat, add olive oil and sauté minced garlic until fragrant and golden brown but not burnt.
- Add halved cherry tomatoes to the pan with garlic and cook until they start to soften and release their juices, about 5 minutes.
- Stir in chopped basil leaves and cook for another minute until basil becomes fragrant and slightly wilted.
- Add cooked pasta to the skillet with tomatoes and basil and gently toss everything together to evenly coat the pasta with sauce. Season with salt and pepper to taste.
- Serve immediately and enjoy your delicious and simple vegan tomato basil pasta dish!
