  1. Sort through the dried green lentils and pick out any debris. Rinse them thoroughly under running water.

  2. In a large pot, sauté the onion and garlic until fragrant and translucent. Add the carrots and celery, and cook for another 5 minutes.

  3. Stir in the tomato paste, vegetable broth or bouillon cube, and herbs (parsley, thyme, and bay leaf).
  4. Layer the soaked and drained lentils over the veggies.
  5. Season with salt and pepper to taste.
  6. Bring the soup to a boil, then reduce heat to low and let it simmer for about 30-45 minutes, until the lentils are tender and the flavors have melded together.
  7. If the soup is too thick, you can add more vegetable broth or water to thin it out.
  8. Once the lentils are done, remove the bay leaf and blend the soup until smooth with an immersion blender or transfer it to a blender and puree until smooth.
  9. Serve hot with some fresh parsley or cilantro as garnish if desired.
