Pepa's Roasted Mushrooms in Ata Din Din Sauce Ingredients: - 1 pound fresh mushrooms, cleaned and sliced - 2 tablespoons olive oil - Salt and pepper to taste - 1 small onion, chopped - 3 cloves garlic, minced - 1 can (8 oz) tomato sauce - 1/4 cup chopped fresh cilantro or parsley - 1 teaspoon ground cumin - 1/2 teaspoon paprika


Preheat your oven to 400°F. In a large mixing bowl, toss together the mushrooms, olive oil, salt, and pepper until well coated. Spread out evenly onto an ungreased baking sheet and roast for about 25 minutes, stirring halfway through, until they are golden brown and tender.

While the mushrooms are roasting, heat another skillet over medium heat. Add the onions and cook for 5 minutes, then add the garlic and continue cooking for another minute or two until softened but not browned. Stir in the tomato sauce, cilantro or parsley, cumin, and paprika; bring to a simmer and let it cook down slightly while the mushrooms finish roasting.

Once both the mushrooms and sauce are ready, combine them in a serving dish. Serve hot as a side dish or appetizer with crusty bread or rice. Enjoy!
