Vegan Avocado Toast with Tomato and Cilantro

Ingredients

1 ripe avocado 2 slices of whole grain bread 2 cherry tomatoes 1/4 teaspoon of cilantro leaves

Instructions

  1. Start by preparing your toast by popping two slices of whole grain bread in the toaster or if you prefer, you can also grill them on a skillet until lightly browned.

  2. While your bread is cooking, cut the ripe avocado in half, remove the pit and scoop out the flesh into a bowl. Mash it with a fork until it's chunky but spreadable.

  3. Once your bread is ready, top each slice with a generous amount of mashed avocado.

  4. In a separate pan, heat up some olive oil over medium heat. Add diced cherry tomatoes and cilantro leaves. Sauté them for about 2 minutes until they start to soften and release their juices.
