Vegan Condensed Milk

  1. In a medium saucepan, combine the full fat coconut milk, granulated sugar, vanilla extract, and pinch of salt. Stir until thoroughly mixed.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer while stirring occasionally to prevent burning or sticking to the bottom of the saucepan.
  3. Once it reaches a gentle simmer, reduce heat to low and let it simmer for about 40 minutes to an hour, stirring occasionally to ensure even heating and to prevent sticking. The mixture will gradually thicken and reduce in volume as it cooks.
  4. After about an hour, carefully check if your mixture has reached the desired thickness. It should be thick enough to coat the back of a spoon. If it hasn't reached the desired thickness, continue to cook and stir until it does.
  5. Once your vegan condensed milk has reached the desired consistency, remove it from heat and let it cool for about 30 minutes before transferring it to an airtight container or jar. Allow it to cool completely before sealing and storing it in the refrigerator for up to two weeks.
  6. Your homemade vegan condensed milk is now ready to use in various recipes such as desserts, coffee drinks, or as a sweetener in smoothies and teas! Enjoy!
