Vegan Ground Beef Tacos

  1. In a food processor, pulse your choice of lentils or chickpeas until they have a ground meat texture. Alternatively, you can mash them with a fork or potato masher. Set aside.
  2. In a large skillet over medium heat, sauté the chopped onion in olive oil until softened and translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Add your chosen legume mixture to the skillet and cook for about 5 minutes to brown and combine flavors.
  4. Stir in taco seasoning and vegetable broth. Reduce heat to low and let simmer for about 20 minutes, stirring occasionally to ensure even cooking. The mixture should become thick and resemble the texture of ground beef. If needed, add more vegetable broth to achieve desired consistency.
  5. While the "ground beef" mixture is simmering, warm your corn tortillas by either steaming them for about 30 seconds or heating them on a dry skillet for about 30 seconds on each side.
  6. To assemble tacos, place some of the "ground beef" mixture onto each tortilla and top with your choice of toppings such as shredded lettuce, tomatoes, avocado, and salsa. Enjoy!
