Vegan LATINX Healthy Meal Recipe


1 cup of quinoa or brown rice as a substitute 2 cups of mixed vegetables such as broccoli, carrots, bell peppers, onions, and zucchini 1 can of black beans drained and rinsed 1 avocado for guacamole topping 3 cloves garlic minced 2 tbsp olive oil 2 cups of chopped tomatoes 1 teaspoon of cumin powder 1/2 teaspoon of paprika powder Salt and pepper to taste


  1. Cook the quinoa or brown rice according to package instructions and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  3. Add the diced onions and bell peppers, and sauté for another 5-7 minutes until softened.
  4. Add the drained and rinsed black beans into the skillet, along with the chopped tomatoes and spices (cumin, paprika, salt, and pepper). Stir well to combine.
  5. Reduce the heat to low and let the mixture simmer for about 1-12 minutes, stirring occasionally.
  6. While the veggie mixture is cooking, prepare the guacamole by mashing the ripe avocado in a bowl with lime juice, salt, and pepper until smooth.
  7. Once the veggie mixture is done, remove from heat and fluff the quinoa or brown rice as needed. Serve the vegetable mixture alongside the latinx vegan quinoa or brown rice, and top each serving with a generous helping of fresh guacamole.
