Vegan Lentil and Avocado Sandwich Recipe

Ingredients

1 can of cooked lentils 2 slices of whole wheat bread 1 avocado 1 tablespoon of hummus 1/2 lettuce leaves 1 tomato slice 1 onion half diced

Instructions

  1. Drain and rinse the canned lentils and set them aside.
  2. Toast the two slices of whole wheat bread to your liking.
  3. In a small mixing bowl, mash the avocado with a fork until it's chunky but spreadable.
  4. Spread the hummus onto one side of each slice of bread using a spoon or a knife.
  5. Add some greens by adding a handful of chopped lettuce and a slice of tomato on top of the hummus on both sides of each slice of bread.
