  1. In a large pot or Dutch oven, sauté the chopped vegetables and minced garlic in a small amount of water or oil over medium heat until they begin to soften. This should take about 5 minutes.
  2. Add the rice to the pot and stir to coat with the vegetable mixture. Cook for an additional 2 minutes to toast the rice and help it absorb flavors.
