Vegan One Pot : A Delicious and Healthy Meal for Animal Lovers

Ingredients:

Instructions:

  1. In a large pot or Dutch oven, sauté the chopped vegetables and minced garlic in a small amount of water or oil over medium heat until they begin to soften. This should take about 5 minutes.
  2. Add the rice to the pot and stir to coat with the vegetable mixture. Cook for an additional 2 minutes to toast the rice and help it absorb flavors.
  3. Stir in the black beans, kidney beans, diced tomatoes with their juice, vegetable broth, chili powder, and cumin. Season with salt and pepper to taste, and add hot sauce or red pepper flakes if desired for added heat.
  4. Bring the mixture to a boil over high heat, then reduce heat to low, cover, and simmer for about 45 minutes to 1 hour or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking and add more broth or water if needed to maintain desired consistency.
  5. Remove from heat and let stand for 5 minutes before serving. Enjoy this nutritious and flavorful vegan one-pot meal as is or with your favorite toppings like avocado, vegan sour cream, or fresh cilantro.
