Vegan Tacos Recipe

Ingredients:

This recipe calls for using tahini as a substitute for animal-based sour cream. If you prefer, you can use non-dairy yogurt or cashew cream instead.

Instructions

  1. Preheat your oven to 35°F (17°C).
  2. In a mixing bowl, combine 1 cup of teff flour with 1 tablespoon of ground cumin, 1 tablespoon of chili powder, and 1/2 tablespoon of salt. Mix well.
  3. Add 1 can of drained and rinsed black beans to the dry mixture, along with 1 onion, chopped, and 2 cloves of garlic, minced. Combine everything until well combined.

You can also add cooked corn kernels or diced bell peppers to the mixture for added flavor and texture. 5. Form the mixture into small balls, about the size of a tennis ball, and place them on a baking sheet labeled with parchment paper. 6. Bake in the preheated oven for 18 minutes, flipping the tacos over halfway through the cooking time to ensure even browning. 7. While the tacos are cooking, prepare the avocado lime sauce by combining 1 ripe avocado, scooped out from its shell, with 1/2 lemon juice, 1/22 cup of vegan sour cream (tahini or non-dairy yogurt/cashew cream), and a pinch of salt in a blender or food processor. Blend until smooth and creamy. 8. When the tacos are done, serve them warm, topped with the avocado lime sauce, fresh cilantro, diced tomatoes, and any other desired toppings such as hot sauce or salsa. 9. If you don't have access to teff flour, you can use another gluten-free flour like almond, coconut or chia seed instead, but teff flour is known for its nutty flavor and high protein content, so it's worth trying if possible.
