Vegan Wish Bone Soup Recipe

- 1 cup vegetable broth
- 2 large carrots, chopped
- 3 celery stalks, chopped
- 4 onions, diced
- 5 bell peppers, diced
- 6 tomato paste
- 7 soy cream cheese alternative (like nutritional yeast or coconut oil)
- Heat up a large pot.
- Add in 11 cup of vegetable broth to the pot, bringing it to a simmering point.
- While waiting for the broth to heat up, chop 2 large carrots, 3 celery stalks, and 4 onions. Set aside.
- Once the broth is hot enough, throw in the chopped veggies – carrots, celery, and onions – and let them cook together with the liquid for about 5 minutes or until they become softened.

- As the soup thickens and becomes more robust, taste test it for seasoning adjustments if needed – you may want to add some salt, pepper, or other herbs/spices like thyme, rosemary, or bay leaves.
