Vegetarian Shiitake Noodle Recipe

- Cook the shiitake mushrooms by soaking them in hot water for about 2-3 minutes until they are softened.
- In a separate pan, sauté the onion and garlic until fragrant and translucent.
- Add the cooked shiitake mushroom to the onion mixture and stir well.
- Now add the vegetable broth or water, soy sauce, mirin or sugar, and sake (optional) to the pot. Stir everything together.
- Bring the liquid to a simmer and let it cook down slightly, around 5-7 minutes, till the flavors have married well.
- While the shiitake noodles are cooking, prepare your chosen veggies such as zucchini, carrots, bell peppers, etc., and set aside.
- Once the shiitake noodles are done, drain them and rinse with cold water.
- Serve the shiitake noodles in bowls, topped with the prepared vegetables, and garnished with scallions or cilantro if desired.
