Vegetarian Shiitake Noodle Recipe


  1. Cook the shiitake mushrooms by soaking them in hot water for about 2-3 minutes until they are softened.
  2. In a separate pan, sauté the onion and garlic until fragrant and translucent.
  3. Add the cooked shiitake mushroom to the onion mixture and stir well.
  4. Now add the vegetable broth or water, soy sauce, mirin or sugar, and sake (optional) to the pot. Stir everything together.
  5. Bring the liquid to a simmer and let it cook down slightly, around 5-7 minutes, till the flavors have married well.
  6. While the shiitake noodles are cooking, prepare your chosen veggies such as zucchini, carrots, bell peppers, etc., and set aside.
  7. Once the shiitake noodles are done, drain them and rinse with cold water.
  8. Serve the shiitake noodles in bowls, topped with the prepared vegetables, and garnished with scallions or cilantro if desired.
